Sleeping Dragon was founded on a simple conviction: that the people of Joliet deserve bread, pastries, and grocery staples made with the same seriousness as any craft industry. We don't rush fermentation. We don't cut corners on butter. We don't use shortcuts that compromise flavor.
Every loaf begins with a wild yeast starter maintained in-house. Every croissant is laminated by hand, layer by layer, before dawn. And our grocery floor carries only the products we'd put on our own tables — artisan cheeses, small-batch preserves, imported olive oils, and pantry items from regional producers.
From the oven to the shelf, everything at Sleeping Dragon is selected or produced to the same exacting standard.
Sourdough boules, whole-grain loaves, brioche, focaccia, and seasonal pastries — all baked from scratch before dawn. Our croissants use French butter and 72 layers. Our sourdough ferments for a minimum of 48 hours.

Every sourdough starts with a biga or poolish made hours in advance, then ferments 48–72 hours. This develops complex acidity and a crust that cracks when you break it.
Our croissants and pain au chocolat are folded by hand — seven turns, rest periods between each, always cold butter. No par-baked, no reheat. Fresh out of the oven only.
Every item on our grocery shelves is evaluated for taste, provenance, and integrity. If we wouldn't serve it to our own family, it doesn't go on the shelf.
Our bakery and grocery are open to the public five days a week. We recommend arriving early — our sourdough loaves and croissants sell out most days.
